Ingredients

Main
  • 4 large red onions thinly sliced
  • 4 tablespoons unsalted butter
  • 4 cups beef or vegetable broth
  • 1 cup dry white wine
  • 1 teaspoon sugar
  • Salt to taste
  • Pepper to taste
  • Fresh thyme for garnish
  • Crusty bread for serving

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Chef's knife
  • Cutting board
  • Measuring cups and spoons
  • Soup ladle

Method

  1. Peel and thinly slice the red onions.
  2. In a large pot, melt the butter over medium heat.
  3. Add the sliced onions to the pot and stir to coat them in butter. Cook, stirring occasionally, until they become soft and golden brown, about 20-25 minutes.
  4. Sprinkle in the sugar and stir well.
  5. Add the dry white wine, stirring to deglaze the pot.
  6. Pour in the beef or vegetable broth and bring the mixture to a boil.
  7. Reduce the heat and let it simmer for 15 minutes.
  8. Season with salt and pepper to taste. Ladle the soup into bowls, top with fresh thyme, and serve with crusty bread.

Notes

For an extra touch, broil some cheese on top of the bread before adding it to the soup.
