  • 4 cups water
  • 1 tablespoon olive oil
  • 1 onion diced
  • 1 green bell pepper diced
  • 2 celery stalks diced
  • 3 cloves garlic minced

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper adjust to taste
  • 1 bay leaf
  • 1 pound smoked sausage sliced
  • 4 cups cooked rice
  • Salt and pepper to taste

Equipment

  • Large pot or Dutch oven
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Knife and cutting board
  • Serving spoon

Method

  1. Rinse the dried red beans under cold water. Soak them in a bowl of water for at least 4 hours or overnight.
  2. Dice the onion, green bell pepper, and celery on a cutting board and mince the garlic.
  3. Heat the olive oil in a large pot over medium heat. Add the diced onion, bell pepper, and celery and sauté until softened, about 5 minutes.
  4. Stir in the minced garlic, dried thyme, smoked paprika, cayenne pepper, and bay leaf, and cook for 1 minute until fragrant.
  5. Add the sliced smoked sausage to the pot and cook until slightly browned, about 5 minutes.
  6. Drain the soaked beans and add them to the pot along with 4 cups of water. Bring the mixture to a boil over high heat.
  7. Reduce heat to low, cover the pot, and simmer for 1 hour, stirring occasionally, until the beans are tender.
  8. Season the beans with salt and pepper to taste. Serve the beans over cooked rice and garnish with chopped green onions if desired.

Notes

For best flavor, let the dish rest a few minutes before serving. Serve with cornbread or a green salad for a complete meal.
