Ingredients

Main
  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg yolk for egg wash
  • Salt and pepper to taste

Equipment

  • Rolling pin
  • Pasta machine (optional)
  • Mixing bowl
  • Dough scraper
  • Cookie cutter or pasta cutter
  • Large pot for boiling
  • slotted spoon

Method

  1. In a mixing bowl, combine flour and salt. Create a well in the center, add eggs and olive oil, then mix until a dough forms.
  2. Transfer the dough to a floured surface and knead for about 10 minutes.
  3. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
  4. In a bowl, mix ricotta, Parmesan, salt, and pepper to prepare the filling.
  5. On a floured surface or using a pasta machine, roll the dough into thin sheets.
  6. Using a cookie cutter or pasta cutter, cut the rolled dough into squares.
  7. Place a teaspoon of filling in the center of each square, moisten the edges with water, fold over to seal, pressing out any air.
  8. Bring a large pot of salted water to a boil, and cook the raviolis for about 5 minutes or until they float to the surface.

Notes

Serve with marinara sauce or brown butter and sage for extra flavor.
