Ingredients

For the Pasta Dough
  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
For the Filling
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg yolk
  • Salt and pepper to taste
For Serving
  • Your favorite marinara or pesto sauce
  • Fresh basil for garnish

Equipment

  • Mixing bowl
  • Rolling pin
  • Flour for dusting
  • Ravioli cutter or pastry wheel
  • Pot for boiling
  • slotted spoon

Method

  1. In a mixing bowl, combine the flour and salt. Create a well in the center and add the eggs, mixing until a dough forms.
  2. Turn the dough onto a floured surface and knead for about 5 minutes until smooth.
  3. Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
  4. In a bowl, mix ricotta, Parmesan, egg yolk, salt, and pepper until smooth.
  5. Once rested, cut the dough in half and roll out each piece into thin sheets.
  6. Place small mounds of filling on one sheet, leaving space between each. Fold the dough over to cover the filling, pressing out air and sealing the edges.
  7. Using a ravioli cutter, cut between the mounds to create individual pieces.
  8. Boil a large pot of salted water and gently add the ravioli. Cook for about 3-5 minutes until they float.

Notes

Make ahead and freeze for convenience. Serve with marinara or pesto sauce.
