Ingredients

Main
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped pistachios
  • 2 tablespoons chopped almonds
  • 1 tablespoon rose water optional

Equipment

  • Heavy-bottomed pan
  • Wooden spatula
  • Measuring cups and spoons
  • Serving bowls

Method

  1. Pour the whole milk into a heavy-bottomed pan and bring it to a boil over medium heat.
  2. Once boiling, reduce the heat to low.
  3. Stir the milk occasionally to prevent it from sticking to the bottom of the pan.
  4. After about 15-20 minutes, when the milk thickens, add the sugar.
  5. Add the cardamom powder and mix well.
  6. Continue to simmer the mixture for another 10-15 minutes, stirring occasionally.
  7. Stir in the chopped pistachios and almonds, along with rose water if using.
  8. Remove the Rabdi from heat and let it cool slightly. Serve it warm or chilled, garnished with extra nuts.

Notes

For an even creamier texture, reserve a little milk and whisk it with a bit of cornstarch before adding it back to the pot.
