Ingredients

Main
  • 1 pound pork or chicken, cut into cubes
  • 1/4 cup olive oil
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce
  • 2 tablespoons vinegar white or apple cider
  • 1 tablespoon dried oregano
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes optional
  • 1 bell pepper cut into squares (optional)
  • 1 onion cut into squares (optional)

Equipment

  • Grill or grill pan
  • Skewers (soaked if wooden)
  • Mixing bowl
  • Whisk or fork
  • Knife and cutting board

Method

  1. In a mixing bowl, combine olive oil, minced garlic, soy sauce, vinegar, oregano, cumin, salt, black pepper, and red pepper flakes.
  2. Add the cubed pork (or chicken) to the marinade, ensuring all pieces are coated. Let it marinate for at least 15 minutes, or ideally, a few hours in the fridge.
  3. If using wooden skewers, soak them in water for about 30 minutes.
  4. Thread the marinated meat onto the skewers, alternating with pieces of bell pepper and onion if you like.
  5. Heat your grill or grill pan to medium-high.
  6. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally.
  7. Use a meat thermometer to check that the internal temperature reaches 145°F for pork or 165°F for chicken.
  8. Remove the skewers from the grill and let them rest for a few minutes before serving.

Notes

For extra flavor, brush the skewers with additional marinade in the last few minutes of grilling.
