Main
  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons fresh lime juice
  • 1 tablespoon chopped fresh cilantro

Equipment

  • Large mixing bowl
  • Whisk or fork
  • Large skillet or frying pan
  • Meat thermometer
  • Serving platter

Method

  1. In a large mixing bowl, combine olive oil, garlic powder, onion powder, cumin, paprika, salt, pepper, and lime juice.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes.
  3. Place a large skillet over medium heat and add a splash of olive oil.
  4. Once the oil is hot, add the marinated chicken thighs skin-side down. Sear for about 5-7 minutes without moving them.
  5. Turn the chicken over and lower the heat to medium-low. Cover the skillet and let it cook for an additional 25-30 minutes.
  6. Ensure the chicken reaches an internal temperature of 165°F.
  7. In the last few minutes of cooking, sprinkle chopped cilantro over the chicken.
  8. Transfer the chicken to a serving platter and let it rest for a few minutes before serving.
