Ingredients

Main
  • 1 bone-in prime rib roast about 4-5 pounds
  • 3 tablespoons kosher salt

  • 2 tablespoons garlic powder
  • 2 tablespoons fresh rosemary chopped
  • 1 tablespoon olive oil

Equipment

  • Roasting pan
  • Meat thermometer
  • Sharp knife
  • Cutting board
  • Aluminum foil

Method

  1. Start by letting the roast sit at room temperature for about an hour.
  2. Preheat your oven to 450°F (232°C).
  3. Rub the roast with olive oil, then coat it with salt, pepper, garlic powder, and rosemary.
  4. Put the roast in a roasting pan, bone side down.
  5. Roast the meat at 450°F (232°C) for about 20 minutes.
  6. After 20 minutes, reduce the oven temperature to 325°F (163°C).
  7. Insert a meat thermometer into the thickest part of the roast. Remove it from the oven when it reaches 130°F (54°C) for medium-rare.
