Ingredients

Main
  • 4 cups diced potatoes about 4 medium-sized
  • 1 cup diced ham
  • 1 medium onion diced
  • 2 cloves of garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Measuring cups and spoons
  • Knife and cutting board
  • Blender or immersion blender (optional)

Method

  1. Start by dicing the potatoes, ham, onion, and garlic.
  2. In a large pot, melt the butter over medium heat.
  3. Add the onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  4. Stir in the diced potatoes and ham, mixing well.
  5. Add the chicken broth and bring the mixture to a boil.
  6. Add the thyme, parsley, salt, and pepper to taste.
  7. Reduce the heat and let the soup simmer for about 20 minutes, or until the potatoes are fork-tender.
  8. If you prefer a smoother soup, use an immersion blender to puree it to your desired consistency.
  9. Finally, stir in the heavy cream and heat through for another 5 minutes.

Notes
