Ingredients

For the Pork Filling
  • 2 pounds pork shoulder cut into chunks
  • 1 onion quartered
  • 4 cloves garlic minced
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
For the Masa
  • 4 cups masa harina
  • 1 cup lard or vegetable shortening
  • 1 teaspoon baking powder
  • 2 teaspoons salt
  • 3 cups chicken broth more as needed

Equipment

  • Large pot or steamer
  • Mixing bowl
  • Wooden spoon
  • Measuring cups and spoons
  • Plastic wrap or corn husks

Method

  1. In a large pot, combine the pork, onion, garlic, chicken broth, chili powder, cumin, salt, and pepper.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for about 1.5 hours.
  3. Once the pork is cooked, remove it from the pot and let it cool slightly.
  4. Shred the pork using two forks, then mix it back with some of the cooking liquid for added flavor.
  5. In a mixing bowl, beat the lard or shortening until fluffy.
  6. Add masa harina, baking powder, salt, and gradually mix in the chicken broth until a smooth dough forms.
  7. If using dried corn husks, soak them in warm water for about 30 minutes.
  8. Spread about 2 tablespoons of masa on the center of each corn husk, add a spoonful of shredded pork, and fold the sides in.
  9. Place the tamales upright in a steamer pot and cover with a damp cloth.
  10. Steam for about 1 to 1.5 hours, checking occasionally to add more water if needed.
  11. Allow the tamales to rest for about 10 minutes after steaming.

Notes

Serve with fresh salsa or crema for added flavor.
