Ingredients

Main
  • 2 pounds pork shoulder cut into cubes
  • 1 tablespoon vegetable oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 red bell pepper diced
  • 1 carrot diced
  • 1 potato diced
  • 1 cup tomato sauce
  • 1 cup water
  • 2 tablespoons soy sauce
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 bay leaf
  • 1 cup green peas optional

Equipment

  • Large pot or Dutch oven
  • Cutting board
  • Chef's knife
  • Wooden spoon
  • Measuring cups and spoons

Method

  1. In a large pot, heat the vegetable oil over medium heat. Sauté the chopped onion and minced garlic until fragrant, about 2 minutes.
  2. Add the cubed pork shoulder to the pot. Cook until browned on all sides, about 5-7 minutes.
  3. Stir in the diced bell pepper, carrots, and potatoes. Sauté for another 3-4 minutes until they start to soften.
  4. Pour in the tomato sauce and water, stirring well to combine.
  5. Add soy sauce, ground black pepper, salt, and the bay leaf. Stir to incorporate.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 45 minutes.
  7. If using, stir in the green peas during the last 5 minutes of cooking.
  8. Before serving, taste and adjust the seasoning as needed.
