Ingredients

Main
  • 2 pounds pork belly
  • 1 cup soy sauce
  • 1 cup mirin
  • 1 cup sake
  • 1/4 cup sugar
  • 3 cloves garlic minced
  • 1- inch piece ginger sliced
  • 2 green onions chopped

Equipment

  • Large pot or Dutch oven
  • Sharp knife for slicing
  • Cutting board
  • Meat thermometer (optional)
  • Plastic wrap or butcher's twine

Method

  1. Start by rolling the pork belly tightly and securing it with kitchen twine or plastic wrap.
  2. In a large pot, heat a small amount of oil over medium-high heat. Sear the pork belly on all sides until golden brown, approximately 5 to 7 minutes.
  3. Remove the pork and set it aside. In the same pot, add garlic, ginger, and green onions, cooking for a few minutes until fragrant.
  4. Pour in the soy sauce, mirin, sake, and sugar. Stir to combine.
  5. Place the seared pork belly back into the pot, ensuring it's submerged in the liquid.
  6. Bring the liquid to a gentle simmer, then lower the heat and cover the pot. Cook for 3 hours.
  7. Once cooked, remove the pork from the pot and let it cool slightly.
  8. Slice the pork belly into thin pieces and serve over ramen, drizzling some of the reserved braising liquid on top.

Notes

For an extra burst of flavor, marinate the pork belly in the soy sauce mixture overnight before cooking.
