Ingredients

Main
  • 2 pounds boneless skinless chicken thighs
  • 1/4 cup olive oil
  • Juice of 2 limes
  • 4 cloves garlic minced
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro optional

Equipment

  • Grill or grill pan
  • Mixing bowl
  • Whisk or fork
  • Meat thermometer
  • Knife and cutting board

Method

  1. In a mixing bowl, whisk together the olive oil, lime juice, minced garlic, cumin, smoked paprika, chili powder, salt, and pepper.
  2. Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let them marinate for at least 30 minutes, or up to 4 hours for more intense flavor.
  3. Preheat your grill to medium-high heat.
  4. Place the marinated chicken on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  5. Remove the chicken from the grill and let it rest for 5 minutes.
  6. Slice the chicken into strips or bite-sized pieces.
  7. Top with chopped cilantro if desired, and serve with your favorite sides.

Notes

For extra flavor, let the chicken marinate overnight in the fridge.
