Ingredients
  

Main
  • 2 tablespoons unsweetened unsalted pistachio paste
  • 2 shots about 2 ounces espresso, freshly pulled
  • 8 ounces whole milk cold
  • 1 teaspoon honey optional
  • Pinch of sea salt
  • 1/4 teaspoon vanilla extract optional

Equipment

  • Espresso machine or moka pot
  • Milk frother or steam wand
  • 12-ounce ceramic mug
  • Small whisk or spoon
  • Kitchen scale
  • Measuring cups and spoons

Method
 

  1. Pull two shots (about 2 ounces) of espresso using an espresso machine or brew strong coffee in a Moka pot.
  2. Spoon 2 tablespoons of pistachio paste into a 12-ounce mug and stir gently if separated.
  3. Add 1 teaspoon honey and a pinch of sea salt to the pistachio paste in the mug.
  4. Pour the hot espresso into the mug to soften and begin dissolving the paste.
  5. Whisk the espresso–pistachio mixture vigorously for about 30 seconds until smooth and lump-free.
  6. Pour 8 ounces of cold whole milk into a milk pitcher and add 1/4 teaspoon vanilla extract if using.
  7. Steam and froth the milk with a steam wand or frother until it reaches 150–160°F and forms silky microfoam.
  8. Slowly pour the steamed milk into the espresso–pistachio mixture, holding back the foam with a spoon.
  9. Spoon the remaining microfoam on top of the latte and serve immediately.

Notes

Serve immediately while hot to enjoy the fresh nutty pistachio flavor.
