Ingredients

Main
  • 1 lb beef sirloin thinly sliced
  • 1/2 lb spicy sausage sliced
  • 2 medium potatoes peeled and diced
  • 1 bell pepper chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1/4 cup soy sauce
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 4 eggs
  • Chopped parsley for garnish

Equipment

  • Large skillet
  • Cutting board
  • Sharp knife
  • Spatula
  • Measuring cups and spoons

Method

  1. Thinly slice the beef sirloin and spicy sausage.
  2. Heat oil in a large skillet over medium heat and add the diced potatoes; cook until golden brown and crispy, about 8-10 minutes, then remove and set aside.
  3. Add the sliced sausage to the same skillet and cook until browned, about 5 minutes.
  4. Add the sliced beef to the skillet and cook until browned and cooked through, about 5-7 minutes.
  5. Stir in the chopped onion, bell pepper, and minced garlic; cook until the vegetables are tender, about 3-4 minutes.
  6. Pour in the soy sauce, sprinkle in the ground cumin, and season with salt and pepper; stir to combine.
  7. Return the crispy potatoes to the skillet and mix everything thoroughly.
  8. In a separate pan, fry the eggs sunny-side up until the whites are set and the yolks are still runny, about 2-3 minutes.
  9. Divide the meat and vegetable mixture among plates, top each with a fried egg, garnish with chopped parsley, and serve immediately.

Notes

For extra flavor, add a splash of hot sauce or a sprinkle of chili flakes before serving. Garnish with chopped parsley.
