Ingredients

Main
  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 cup water
  • 1 teaspoon salt
  • 2 cups mashed potatoes preferably seasoned
  • 1 cup shredded cheese cheddar works well
  • 1 pound sausage smoked or kielbasa
  • 2 tablespoons butter for frying
  • Chopped onions optional, for garnish

Equipment

  • Large mixing bowl
  • Rolling pin
  • Pot for boiling
  • Skillet for frying
  • Colander
  • Wooden spoon

Method

  1. In a large mixing bowl, combine the flour and salt. Create a well in the center, add the egg and water, then mix until a dough forms.
  2. Transfer the dough to a floured surface and knead for about 5 minutes until smooth.
  3. Using a rolling pin, roll the dough to about 1/8 inch thickness.
  4. Use a round cutter or glass to cut out circles from the rolled dough.
  5. In a bowl, mix the mashed potatoes and cheese until well combined.
  6. Place a small spoonful of filling onto each dough circle. Fold the dough over and pinch the edges tightly to seal.
  7. In a skillet, cook the sausage over medium heat until browned and cooked through.
  8. Boil the filled pierogies in salted water until they float, about 3-4 minutes. Drain and fry in melted butter until golden brown.

Notes

Serve with sour cream or applesauce for a delightful dip.
