  • 1 cup unsalted butter chilled and diced
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 6 to 8 tablespoons ice water

Equipment

  • Plastic wrap
  • Chill-resistant surface

Method

  1. In a mixing bowl, whisk together the flour, salt, and sugar.
  2. Add the diced, chilled butter to the dry ingredients and use a pastry cutter or fork to blend until the mixture resembles coarse crumbs.
  3. Sprinkle ice water over the mixture, one tablespoon at a time, mixing until the dough holds together.
  4. Divide the dough in half, flatten into discs, and wrap in plastic wrap; chill for at least 30 minutes.
  5. On a floured surface, roll out one disc to fit your pie dish.
  6. Carefully place the rolled dough into the pie dish, pressing gently into the edges.
  7. Preheat your oven to 375°F (190°C) and bake for about 10-15 minutes if a pre-baked crust is required.
