Ingredients

Main
  • 1 pound bologna cut into 1/4-inch slices
  • 1 cup white vinegar
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 1 tablespoon salt
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1 teaspoon red pepper flakes optional for heat
  • 1 clove garlic crushed (optional)

Equipment

  • Large mixing bowl
  • Knife and cutting board
  • Glass jar with a lid
  • Measuring cups and spoons
  • Spoon for mixing

Method

  1. Start by slicing the bologna into 1/4-inch thick rounds.
  2. In a large mixing bowl, combine the white vinegar, water, granulated sugar, and salt. Stir until the sugar and salt dissolve completely.
  3. Incorporate black peppercorns, mustard seeds, and red pepper flakes into the brine.
  4. Place a layer of bologna slices in the glass jar. Pour some of the brine over the bologna, ensuring it's fully submerged.
  5. If desired, add crushed garlic cloves between the layers of bologna.
  6. Seal the jar tightly with a lid and place it in the refrigerator.
  7. Let the bologna pickle for at least three days.
  8. Once pickled, enjoy the bologna as a snack or add it to sandwiches and salads.

Notes

Allow the bologna to pickle for at least a week for a more robust flavor. Store in the refrigerator for up to 2 months.
