Ingredients

Main
  • 5 cups fresh peaches peeled and chopped
  • 2 cups granulated sugar
  • 1/4 cup lemon juice
  • 1/2 teaspoon ground cinnamon optional
  • 1/4 teaspoon salt

Equipment

  • Canning jars
  • Water bath canner or large pot
  • Canning lid and band
  • Jar lifter
  • Large pot for cooking
  • Wooden spoon or spatula
  • Measuring cups and spoons

Method

  1. Sterilize your canning jars and lids.
  2. Peel and chop the peaches into small pieces.
  3. In a large pot, combine the chopped peaches, sugar, lemon juice, cinnamon, and salt. Stir well and let sit for 10 minutes.
  4. Heat the pot over medium-high heat until it boils. Stir frequently.
  5. Once boiling, reduce the heat to medium and let it simmer for 20 minutes until thickened.
  6. To check if done, place a spoonful on a cold plate; it should hold its shape.
  7. Ladle the hot peach preserves into the sterilized jars, leaving 1/4 inch of headspace. Wipe rims to ensure a proper seal.
  8. Place jars in the water bath canner and process for 10-15 minutes.

Notes
