Ingredients

Main
  • 4 cups fresh peaches peeled and chopped
  • 2 cups granulated sugar
  • 1/4 cup lemon juice
  • 1/2 teaspoon cinnamon optional
  • 1/4 teaspoon nutmeg optional

Equipment

  • Large pot
  • Wooden spoon
  • Jar lifter
  • Canning jars with lids
  • Measuring cups and spoons

Method

  1. Start by peeling and chopping the peaches into small pieces.
  2. In a large pot, combine the chopped peaches, sugar, and lemon juice. Stir to coat the peaches and let the mixture sit for about 10 minutes.
  3. Place the pot over medium heat to dissolve the sugar and begin cooking the peaches.
  4. Once the mixture starts to bubble, increase the heat to medium-high until it reaches a rolling boil.
  5. Reduce the heat to medium and let it simmer for about 30 minutes, stirring occasionally.
  6. To check if the preserves are ready, drop a spoonful onto a cold plate. If it holds its shape, it's done.
  7. Using a jar lifter, carefully transfer the hot preserves into sterilized canning jars, leaving about 1/4 inch of headspace at the top.
  8. Seal the jars with lids and process them in a boiling water bath for 10 minutes.
