Ingredients

Main
  • 1 ham bone with some meat attached
  • 2 cups dried green split peas rinsed
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cloves garlic minced
  • 8 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • Salt to taste
  • 1 tablespoon olive oil optional

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Measuring cups and spoons
  • Blender or immersion blender
  • Cutting board and knife

Method

  1. In a large pot, heat the olive oil over medium heat. Sauté the diced onion, carrots, and celery until softened, about 5-7 minutes.
  2. Add the minced garlic and cook for another minute.
  3. Stir in the rinsed split peas, ensuring they are well mixed with the vegetables.
  4. Add the ham bone and pour in the broth.
  5. Add thyme, black pepper, and salt to taste.
  6. Bring the mixture to a boil, then reduce heat to low and cover. Let it simmer for about 1 hour.
  7. Once the peas are soft, remove the ham bone and blend the soup to your desired consistency.
  8. Shred any remaining ham from the bone and stir it back into the soup.

Notes

Serve with crusty bread or a mixed greens salad.
