  • 1 tablespoon onion powder
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped

Equipment

  • Roasting pan
  • Meat thermometer

  • Aluminum foil

Method

  1. Take the prime rib roast out of the refrigerator and let it come to room temperature for about 30 minutes.
  2. Preheat your oven to 450°F (232°C).
  3. Rub the roast all over with olive oil and season with kosher salt, black pepper, garlic powder, onion powder, rosemary, and thyme.
  4. Place the seasoned roast in a roasting pan, bone side down.
  5. Roast in the preheated oven for 15 minutes.
  6. Reduce the oven temperature to 325°F (163°C) and continue roasting for about 1.5 hours.
  7. Use a meat thermometer to check the internal temperature; aim for 130°F (54°C) for medium-rare.
  8. Remove the roast from the oven and tent it with aluminum foil. Let it rest for at least 20 minutes before slicing.
