Ingredients

Main
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter melted

Equipment

  • Mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Griddle or non-stick skillet
  • Spatula

Method

  1. In a mixing bowl, whisk together 1 cup all-purpose flour, 2 tablespoons granulated sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt until well combined.
  2. In a separate bowl, whisk together 1 cup buttermilk, 1 large egg, and 2 tablespoons melted unsalted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined, being careful not to overmix.
  4. Heat a griddle or non-stick skillet over medium heat (about 375°F) and lightly grease with butter or oil.
  5. Using a 1/4-cup measuring cup, pour batter onto the hot griddle to form pancakes about 4 inches in diameter.
  6. Cook for 2 to 3 minutes, or until bubbles appear on the surface and edges look set.
  7. Carefully flip the pancakes with a spatula and cook for an additional 1 to 2 minutes, until golden brown.
  8. Remove pancakes from the griddle, keep warm, and serve immediately with your favorite toppings.

Notes

For extra fluffy pancakes, let the batter rest for about 5 minutes before cooking.
