Ingredients

Main
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup water
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract

Equipment

  • Mixing bowl
  • Whisk or fork
  • Non-stick skillet or griddle
  • Spatula
  • Measuring cups and spoons

Method

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix the water, vegetable oil, and vanilla extract.
  3. Pour the wet mixture into the dry mixture and stir gently until just combined; a few lumps are okay.
  4. Heat a non-stick skillet over medium heat.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  6. Carefully flip the pancakes and cook for another 1-2 minutes until golden brown.
  7. Keep pancakes warm in a low oven if making multiple batches.
  8. Serve your pancakes with your favorite toppings.

Notes

For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.
