Method
- Remove the steaks from the refrigerator and let them sit at room temperature for 30 to 40 minutes.
- Pat the steaks dry on all sides with paper towels.
- Season both sides of each steak with kosher salt and cracked black pepper about 5 minutes before cooking.
- Heat the skillet over medium-high to high heat for 3 to 4 minutes until it is smoking hot.
- Add the oil to the pan and swirl to coat.
- Place the steaks in the pan and sear the first side undisturbed for 3 to 4 minutes.
- Flip the steaks with tongs and sear the second side for 3 minutes.
- Reduce heat to medium-low, add butter, smashed garlic, and thyme, and baste the steaks with the melted butter for 2 to 3 minutes.
- Check the internal temperature with a meat thermometer and remove the steaks at 125 to 130°F, then transfer to a cutting board.
- Let the steaks rest for 5 minutes before serving and finish with a sprinkle of fleur de sel if desired.
