Method
- Preheat oven to 275°F (135°C).
- Remove the membrane from the back of the ribs by slipping a sharp knife beneath it and pulling it off.
- In a bowl, combine brown sugar, paprika, garlic powder, onion powder, salt, black pepper, cayenne, and dry mustard.
- Pat ribs dry with paper towels, rub the spice mixture evenly over both sides of the ribs, pressing to adhere.
- Place ribs meat side up on a foil-lined rimmed baking sheet, pour 1 cup of water into the pan, and tent loosely with foil.
- Bake ribs at 275°F (135°C) for 2 hours without opening the oven.
- Meanwhile, in a small saucepan over medium heat, whisk together ketchup, apple cider vinegar, honey, Worcestershire sauce, and soy sauce.
- Add smoked paprika, garlic powder, onion powder, cayenne, and liquid smoke; simmer for 5 minutes until slightly thickened, then remove from heat.
- Carefully remove ribs from oven, discard top foil, and brush the top of the ribs generously with barbecue sauce.
- Increase oven temperature to 350°F (175°C) and bake ribs uncovered for 20 minutes.
- Flip ribs, brush the other side with more sauce, and bake uncovered at 350°F (175°C) for an additional 20 to 25 minutes until sauce is caramelized.
- Remove ribs from oven and let rest for 5 minutes before cutting between the bones and serving.
Notes
The ribs taste even better the next day as the flavors develop; leftovers reheat well in the oven at 300°F (150°C) for 15 minutes.
