Ingredients

Main
  • 4 boneless skinless chicken breasts
  • 1 cup sliced mushrooms
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup marsala wine
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Equipment

  • Large skillet
  • Meat mallet or rolling pin
  • Baking dish
  • Sharp knife
  • Cutting board
  • Measuring cups and spoons

Method

  1. Preheat your oven to 375°F (190°C).
  2. Place each chicken breast between two sheets of plastic wrap and pound them gently with a meat mallet.
  3. Sprinkle garlic powder, onion powder, salt, and pepper on both sides of the chicken.
  4. Place a generous amount of mozzarella cheese and some mushrooms on one side of each chicken breast. Fold the chicken over to enclose the filling.
  5. Use toothpicks to secure the folded chicken breasts if needed.
  6. Coat each stuffed chicken breast lightly in flour, shaking off excess.
  7. In a large skillet, heat olive oil and butter over medium-high heat. Sear the chicken for about 4-5 minutes on each side until golden brown.
  8. Remove the chicken and set it aside. In the same skillet, add marsala wine and chicken broth, scraping up any brown bits.
  9. Return the chicken to the skillet, spoon some sauce over it, and transfer everything to the oven. Bake for 20 minutes or until the chicken is cooked through.
  10. Let your chicken rest for a few minutes after baking.

Notes

Serve with garlic mashed potatoes or steamed green beans.
