Ingredients

Main
  • 2 pounds oxtail
  • 1 tablespoon vegetable oil
  • 1 large onion chopped
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cloves garlic minced
  • 6 cups beef broth
  • 1 cup diced tomatoes canned or fresh
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Equipment

  • Large pot or Dutch oven
  • Sharp knife
  • Cutting board
  • Wooden spoon
  • Measuring cups and spoons

Method

  1. Heat the vegetable oil in a large pot over medium-high heat.
  2. Sear the oxtail pieces until they are browned on all sides, then set aside.
  3. In the same pot, add the chopped onion, carrots, and celery, and sauté until softened, about 5 minutes.
  4. Add the minced garlic, bay leaves, and dried thyme to the vegetables.
  5. Return the browned oxtail to the pot and pour in the beef broth and diced tomatoes.
  6. Bring the soup to a boil, then reduce to a simmer and cover.
  7. Simmer for about 2 to 3 hours until the oxtail is tender and falling off the bone.
  8. Periodically skim off any fat that rises to the surface.
  9. Once cooked, remove the oxtail, shred the meat from the bones, and return the meat to the soup.
  10. Season with salt and pepper to taste and garnish with fresh parsley before serving.
