Ingredients

Main
  • 3 cups whole wheat flour
  • 1 ½ teaspoons salt
  • ½ teaspoon instant yeast
  • 1 ½ cups warm water about 110°F

Equipment

  • Large mixing bowl
  • Wooden spoon or spatula
  • Plastic wrap or kitchen towel
  • Dutch oven or heavy pot with lid
  • Cooling rack

Method

  1. In a large mixing bowl, combine the whole wheat flour, salt, and instant yeast.
  2. Pour the warm water into the dry ingredients and stir until a shaggy dough forms.
  3. Cover the bowl tightly with plastic wrap or a kitchen towel and let it sit at room temperature for about 12 hours.
  4. Preheat your oven to 450°F and place a Dutch oven in the oven to heat up.
  5. Lightly flour a work surface and turn the dough out onto it, folding it over itself a couple of times.
  6. Place the shaped dough onto a piece of parchment paper and cover it with a towel. Let it rise for another 30 minutes.
  7. Carefully remove the hot Dutch oven from the oven and lift the parchment paper with the dough into the pot.
  8. Cover with the lid and bake for 30 minutes.
  9. After 30 minutes, remove the lid and bake for an additional 15 minutes until golden brown.

Notes

Let the bread cool completely before slicing to maintain texture.
