  • 1 large onion thinly sliced
  • 2 tomatoes chopped
  • 1/2 cup yogurt
  • 4 tablespoons ginger-garlic paste
  • 1/4 cup mint leaves chopped
  • 1/4 cup coriander leaves chopped
  • 4 tablespoons ghee or oil
  • 2 green chilies slit
  • 1 teaspoon cumin seeds
  • 4 whole cloves
  • 4 green cardamom pods

  • Salt to taste
  • Water as needed

Equipment

  • Heavy-bottomed pot or pressure cooker

Method

  1. Rinse the basmati rice under cold water until the water runs clear.

  7. Drain the soaked rice and layer it over the mutton in the pot. Pour in enough water to cover the rice, then sprinkle with mint, coriander, and garam masala.
  8. Cover the pot with a tight lid and cook on low heat for about 30-40 minutes.

Notes

Mutton Biryani is best served hot, paired with cooling sides such as raita, salad, boiled eggs, or mint chutney.
