Ingredients

Main
  • 1 lb boneless skinless chicken thighs, cut into bite-sized pieces
  • 2 cups mushrooms sliced (shiitake or button mushrooms work well)
  • 1 bell pepper sliced
  • 3 cloves garlic minced
  • 1/4 cup soy sauce
  • 2 tbsp cornstarch
  • 1 tbsp vegetable oil
  • 1 tbsp sesame oil
  • 1/4 cup green onions chopped (for garnish)

Equipment

  • Large skillet or wok
  • Sharp knife
  • Cutting board
  • Measuring cups and spoons
  • Spatula or wooden spoon

Method

  1. Start by cutting the chicken thighs into bite-sized pieces and slicing the mushrooms and bell pepper.
  2. In a bowl, combine the chicken pieces with soy sauce and cornstarch.
  3. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  4. Add the marinated chicken to the hot skillet. Sauté for about 5-7 minutes, stirring occasionally until the chicken is cooked through and golden brown.
  5. Stir in the sliced mushrooms and bell pepper, cooking for another 3-4 minutes.
  6. Add the minced garlic to the skillet and sauté for an additional minute.
  7. Drizzle the sesame oil over the chicken and vegetables, stirring to combine.
  8. Remove from heat and garnish with chopped green onions. Serve hot over rice or noodles for a complete meal.
