  • 3 large egg whites room temperature
  • 3/4 cup granulated sugar
  • 1 cup sliced almonds or chopped, your preference
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • Pinch of salt

Method
 

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. Separate eggs and place the whites in a clean, grease-free mixing bowl.
  3. Using an electric mixer on medium speed, whip the egg whites until foamy and soft peaks form, about 2 to 3 minutes.
  4. With the mixer running, add granulated sugar one tablespoon at a time, waiting a few seconds between additions until fully incorporated.
  5. Continue whipping until stiff, glossy peaks form, about 5 to 7 minutes total.
  6. Gently fold in vanilla extract, almond extract, and a pinch of salt using a rubber spatula.
  7. Fold in sliced almonds until evenly distributed.
  8. Drop rounded tablespoons or use a small ice cream scoop to portion meringue onto prepared baking sheets, spacing about 1 inch apart.
  9. Bake for 12 to 15 minutes, until lightly golden on the outside and set.
  10. Allow pastries to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

Room temperature egg whites whip faster; bring them to room temperature before whipping. Store cooled pastries in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
