  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup buttermilk or plain yogurt

Method
 

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with liners or spray with cooking spray.
  2. Peel and mash the bananas in a small bowl with a fork until mostly smooth with a few small chunks remaining.
  3. In a large mixing bowl, whisk together the vegetable oil, granulated sugar, and egg for about 1 minute, until pale and slightly frothy.
  4. Stir in the mashed bananas, vanilla extract, and buttermilk until well combined.
  5. In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
  6. Gently fold the dry ingredients into the wet mixture with a spatula until just combined and no streaks of flour remain.
  7. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  8. Bake for 20 to 22 minutes, until the tops are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before serving.

Store cooled muffins in an airtight container for up to five days or freeze individually wrapped for up to three months.
