Ingredients

Main
  • 1 pre-made graham cracker crust or 9-inch pie shell
  • 1 can 14 ounces sweetened condensed milk
  • 8 ounces cream cheese softened to room temperature
  • 8 ounces frozen whipped topping such as Cool Whip, thawed
  • 1/2 cup lemon juice or lime juice
  • 1 tablespoon powdered sugar optional, for dusting

Equipment

  • 9 inch pie dish
  • Large mixing bowl
  • Electric mixer or whisk
  • Rubber spatula
  • Measuring cups and spoons
  • Can opener
  • Sharp serrated knife

Method

  1. Gather all ingredients and equipment, then remove cream cheese to soften for about 30 minutes.
  2. Pour sweetened condensed milk into a large mixing bowl and add softened cream cheese; beat on medium speed for 2 to 3 minutes until smooth and lump-free.
  3. Add lemon or lime juice and mix on low speed for 1 minute until the mixture begins to thicken.
  4. Turn off the mixer and gently fold in the thawed whipped topping with a rubber spatula until fully combined.
  5. Taste the filling and adjust sweetness by adding more lemon juice for tartness or powdered sugar for sweetness as needed.
  6. Pour the filling into the prepared crust and smooth the top evenly with a spatula.
  7. Cover the pie loosely and refrigerate for at least 4 hours or overnight until set and mousse-like.
  8. Use a serrated knife dipped in hot water and wiped dry to slice the pie cleanly before serving.

Notes
