Ingredients
  

Main
  • 2 ounces mezcal preferably 100% agave
  • 1 ounce fresh lime juice
  • 0.5 ounces agave nectar
  • 1 cup ice cubes
  • Kosher salt for rimming the glass
  • 1 lime wheel for garnish
  • Optional: 0.25 ounces fresh orange juice

Equipment

  • Cocktail shaker or mason jar with lid
  • Jigger or shot glass for measuring
  • Cocktail strainer or fine mesh strainer
  • Coupe glass or rocks glass
  • Small plate for salt rim
  • Citrus juicer or hand reamer
  • Bar spoon for stirring
  • Knife for cutting lime wheels

Method
 

  1. Pour kosher salt onto a small plate. Wet the rim of the glass with a lime wheel and roll it in salt until evenly coated.
  2. Measure 2 ounces of mezcal into the shaker using a jigger.
  3. Cut a fresh lime in half and extract 1 ounce of juice into the shaker using a citrus juicer or hand reamer.
  4. Add 0.5 ounces of agave nectar to the shaker.
  5. Fill the shaker three-quarters full with ice cubes.
  6. Seal the shaker and shake vigorously for 10 to 12 seconds until well chilled.
  7. Strain the mixture into the prepared salt-rimmed glass, using a strainer to hold back ice chips.
  8. Garnish with a lime wheel on the rim and serve immediately.

Notes

Serve immediately at peak temperature. Chill glassware in the freezer for 15 minutes before serving for best results.
