Ingredients

Main
  • 4 cups frozen corn
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 lime juiced
  • 1 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro for garnish optional

Equipment

  • Large skillet
  • Spatula
  • Measuring cups and spoons
  • Mixing bowl
  • Grater or zester

Method

  1. In a large skillet, over medium heat, add the frozen corn. Cook for about 5-7 minutes, stirring occasionally, until heated through and slightly caramelized.
  2. While the corn is cooking, combine the mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and black pepper in a mixing bowl.
  3. Once the corn is cooked, remove it from the heat and let it cool slightly. Then, add the corn to the mixing bowl with the sauce and stir until the corn is well coated.
  4. Gently fold in the crumbled cotija cheese.
  5. Give it a taste and adjust seasoning if needed.
  6. Transfer the corn to a serving dish. It’s best served warm.
  7. Sprinkle with fresh cilantro if desired.

Notes

For an extra kick, add a sprinkle of hot sauce just before serving.
