- In a small bowl, mix ground cumin, chili powder, garlic powder, paprika, salt, and pepper; rub mixture evenly over both sides of chicken breasts.
- Heat a large skillet over medium-high heat and add 2 tablespoons olive oil; when oil shimmers (about 1 minute), place chicken in skillet.
- Sear chicken without moving for 5 minutes to form a golden crust.
- Flip chicken and cook for another 5 to 7 minutes until internal temperature reaches 165°F.
- Transfer chicken to a cutting board and let rest for 3 minutes, then slice against the grain into strips.
- In a small bowl, whisk together lime juice, 2 tablespoons olive oil, honey, minced garlic, 0.25 teaspoon cumin, salt, and pepper to make the dressing.
- In a large bowl, combine chopped romaine, black beans, corn, cherry tomatoes, red onion, and cilantro; toss gently.
- Top salad with warm sliced chicken and avocado slices, drizzle with lime dressing, and sprinkle with cotija cheese; serve immediately.
