  • 4 boneless skinless chicken breasts (about 6 ounces each) or 8 chicken thighs
  • 1/2 cup mayonnaise
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano or Italian seasoning
  • 1/2 teaspoon red pepper flakes optional
  • 2 tablespoons fresh lemon juice or lime juice
  • 1 tablespoon fresh parsley chopped (for garnish)

  • Large baking sheet or rimmed sheet pan
  • Parchment paper or aluminum foil
  • Small mixing bowl

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or aluminum foil.
  3. Combine salt, black pepper, garlic powder, onion powder, paprika, oregano, and red pepper flakes in a small mixing bowl.
  4. Add mayonnaise, minced garlic, and lemon juice to the spices and stir until smooth.
  5. Pat chicken pieces dry with paper towels.
  6. Place chicken on the baking sheet and coat evenly with the mayo mixture.
  7. Bake chicken for 15-20 minutes (breasts) or 20-25 minutes (thighs), until internal temperature reaches 165°F (74°C).
  8. Remove from oven and let rest for 3-5 minutes before serving.
  9. Garnish with chopped parsley if desired.
