Method
- Pat the chicken breasts dry with paper towels to ensure a good sear.
- Season both sides of the chicken with salt, black pepper, and garlic powder.
- Heat olive oil in a large skillet over medium heat, then add the chicken and cook for 6–7 minutes per side until golden brown and cooked through to 165°F.
- Transfer the cooked chicken to a plate and cover to keep warm.
- Reduce the heat to low and pour heavy cream into the same skillet, stirring in sun-dried tomatoes, Parmesan cheese, dried basil, and red pepper flakes.
- Simmer the sauce for 3–4 minutes, stirring frequently, until it thickens slightly.
- Return the chicken breasts to the skillet, spooning sauce over them so they are fully coated.
- Let the chicken and sauce simmer together for an additional 5 minutes to heat through and meld flavors.
- Plate the chicken, spoon the creamy sauce over the top, and garnish with fresh herbs if desired before serving immediately.
Notes
Serve immediately for the best texture; the sauce will thicken as it cools. Pair with crusty bread, pasta, or vegetables.
