Ingredients

Main
  • 1 cup sago pearls
  • 2 ripe mangoes peeled and diced
  • 1 pomelo segmented and chopped
  • 2 cups coconut milk
  • 1/2 cup sugar adjust to taste
  • 1 cup water for cooking sago

Equipment

  • Medium saucepan
  • Mixing bowl
  • Whisk
  • Spoon for serving
  • Measuring cups and spoons

Method

  1. Bring 1 cup of water to a boil in a medium saucepan.
  2. Add the sago pearls and cook for about 15 minutes, stirring occasionally until they become translucent.
  3. Once cooked, remove the pearls from heat and drain them in a fine sieve.
  4. Rinse the pearls under cold water to stop the cooking process and remove excess starch.
  5. In a mixing bowl, combine the diced mangoes with 1/2 cup of sugar and mash into a smooth puree.
  6. In a saucepan, heat the coconut milk over low heat and stir in the mango puree until well combined.
  7. Add the rinsed sago pearls to the mango-coconut mixture and stir gently to incorporate.
  8. Transfer the mixture to a serving bowl or individual cups and refrigerate for at least 20 minutes.
  9. Segment and chop the pomelo into bite-sized pieces while the mixture chills.
  10. Once chilled, scoop the sago mixture into bowls and top with the fresh pomelo pieces.

Notes

Let the dessert chill longer for the best flavor infusion; overnight is even better!
