Ingredients

  • 2 cups fresh mango puree about 4 medium mangoes, peeled and blended
  • 1 cup heavy whipping cream cold
  • 1/4 cup granulated sugar
  • 2 tablespoons lime juice freshly squeezed
  • 1/4 teaspoon salt

Method
 

  1. Remove mango flesh from pits and blend until smooth, adding a splash of water if necessary.
  2. Strain the puree through a fine-mesh strainer, pressing with a spatula to remove fibers.
  3. Stir the lime juice and salt into the strained mango puree.
  4. Place the mixing bowl and beaters in the freezer for 5 minutes.
  5. Pour the cold heavy cream into the chilled bowl and whip on high speed until soft peaks form, about 2 to 3 minutes.
  6. Add the granulated sugar and continue whipping until stiff peaks form, about 1 to 2 minutes.
  7. Gently fold the mango mixture into the whipped cream using a rubber spatula until just combined.
  8. Divide the mousse among serving glasses or bowls and chill for at least 2 hours before serving, or serve immediately for a softer texture.

Notes

Chill for at least 2 hours for a firmer texture; mousse can be made up to 3 days in advance.
