- Peel and dice 2 cups of fresh mango and set aside.
- Put on gloves, stem and seed 2 to 3 habanero peppers, then roughly chop them.
- Add mango, habaneros, diced red onion, lime juice, honey, salt, black pepper and garlic powder to a blender.
- Blend on high for 60 to 90 seconds until smooth, stopping to scrape down sides and blending another 30 seconds if needed.
- Optional: Strain the blended sauce through a fine-mesh strainer into a bowl to remove pulp for a silky texture.
- Pour the sauce into a small saucepan and bring to a gentle simmer over medium heat.
- Simmer for 5 to 8 minutes, stirring occasionally, until the color deepens and flavors concentrate.
- Remove from heat, stir in chopped cilantro if using, taste and adjust salt, lime juice or honey while warm.
- Allow the sauce to cool for 30 minutes before storing in glass jars for flavors to meld.
Notes
Make at least 30 minutes before serving to allow flavors to meld and mellow.
