Ingredients

Main
  • 2 live lobsters about 1.5 lbs each
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh chives
  • 4 top-split hot dog buns
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste

Equipment

  • Large pot for boiling
  • Colander for draining
  • Mixing bowl
  • Butterfly knife
  • Griddle or skillet for toasting

Method

  1. Bring a large pot of salted water to a rolling boil.
  2. Add the lobsters to the pot and cover. Boil for about 8-10 minutes until the shells turn bright red and the meat is opaque.
  3. Remove the lobsters and place them in a colander to cool. Once cool, crack the shells and extract the meat using a butterfly knife.
  4. In a mixing bowl, combine the lobster meat, mayonnaise, lemon juice, chives, salt, and pepper.
  5. Melt the butter in a griddle or skillet over medium heat. Toast the hot dog buns until golden brown.
  6. Generously spoon the lobster mixture into each toasted bun.
  7. Place the filled buns on a serving platter and serve immediately.

Notes

For an extra touch, serve with a side of crispy potato chips or a light salad.
