Ingredients

Main
  • 2 live lobsters about 1 ½ pounds each
  • 4 tablespoons unsalted butter
  • 1 medium onion chopped
  • 1 carrot chopped
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 1/4 cup tomato paste
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper optional
  • 4 cups fish stock or seafood stock
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chives chopped for garnish

Equipment

  • Large pot
  • Blender or immersion blender
  • Strainer
  • Wooden spoon
  • Measuring cups and spoons

Method

  1. Bring a large pot of salted water to a boil. Carefully add the lobsters, cover, and cook for about 10 minutes until they are bright red.
  2. Once cooked, remove the lobsters and let them cool slightly. Extract the meat from the claws and tails, chop it, and set it aside.
  3. In the same pot, melt the butter over medium heat. Add onions, carrots, celery, and garlic, cooking until they are softened and fragrant, about 5 minutes.
  4. Stir in the tomato paste, thyme, and cayenne pepper. Cook for another 2 minutes.
  5. Add the fish stock to the pot and bring the mixture to a simmer. Let it simmer for 10 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Return the pureed soup to the pot and stir in the heavy cream and chopped lobster meat.
  8. Season with salt and pepper to taste. Serve hot, garnished with chopped chives.

Notes

For an extra touch, add a splash of sherry or cognac before serving.
