- Pour the vegetable broth into a separate saucepan and bring to a gentle simmer over medium heat.
- Heat 2 tablespoons of butter and the olive oil in a large saucepan over medium heat, then add the diced onion and cook for 2 to 3 minutes until softened and translucent.
- Add the Arborio rice to the pan and stir constantly for about 1 minute to toast the grains.
- Pour in the white wine and stir until the rice absorbs it completely, about 1 to 2 minutes.
- Add warm broth one ladle (about 3/4 cup) at a time, stirring frequently and waiting until most liquid is absorbed before adding more.
- Continue adding broth and stirring for about 18 to 20 minutes, until the rice is creamy and al dente.
- Remove the pan from heat and stir in the lemon juice and the remaining 2 tablespoons of cold butter.
- Stir in the Parmesan cheese and lemon zest, then season with salt and pepper to taste.
Notes
Garnish with fresh parsley if desired and serve immediately for best texture.
