Ingredients

Main
  • 3 pounds lamb shoulder cut into large chunks
  • 1 onion quartered
  • 4 cloves garlic minced
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 cup beef broth
  • 1/4 cup apple cider vinegar
  • 2 tablespoons lime juice
  • 2 bay leaves

Equipment

  • Slow cooker or pressure cooker
  • Knife and cutting board
  • Measuring spoons and cups
  • Mixing bowl
  • Serving platter

Method

  1. Start by cutting the lamb into large chunks and mincing the garlic.
  2. In a mixing bowl, combine the cumin, oregano, chili powder, black pepper, and salt. Rub this spice mixture all over the lamb.
  3. If you have time, brown the lamb in a hot skillet before adding it to the slow cooker.
  4. Place the seasoned lamb in your slow cooker. Add the onion, garlic, beef broth, apple cider vinegar, lime juice, and bay leaves on top.
  5. Set the cooker to low and let it cook for 6 hours.
  6. Once the cooking time is up, remove the lamb and shred it using two forks.
  7. Return the shredded lamb to the slow cooker and stir to coat it in the juices.
  8. Serve the lamb barbacoa in tacos, burritos, or over rice, garnished with your favorite toppings.

Notes

For an extra flavor kick, let the shredded lamb sit in the juices for about 30 minutes before serving.
