Ingredients

Main
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 2 packages instant ramen noodles discard the seasoning packets
  • 1 cup kimchi chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions sliced
  • 2 eggs optional, for topping
  • 1 teaspoon gochujang Korean chili paste, optional

Equipment

  • Large pot
  • Cooking spoon
  • Measuring cups and spoons
  • Knife and cutting board
  • Serving bowls

Method

  1. In a large pot, combine the chicken or vegetable broth with water. Bring it to a boil over medium-high heat.
  2. Once boiling, add the instant ramen noodles. Cook them according to package instructions, usually around 3-4 minutes.
  3. Add the chopped kimchi to the pot. This will infuse the broth with a delightful tang as it warms up.
  4. Stir in the soy sauce and sesame oil. These ingredients add richness and enhance the umami flavor of the dish.
  5. If you want protein, poach or soft-boil the eggs in a separate pot. This adds creaminess when you slice them over the ramen.
  6. If you like it spicy, add gochujang to the broth. Adjust the amount based on your heat preference.
  7. Divide the ramen noodles and broth into serving bowls. Make sure everyone gets a good amount of kimchi.
  8. Top each bowl with sliced green onions and a halved soft-boiled egg. Enjoy your homemade Kimchi Ramen!

Notes

Always taste the broth before serving; you can adjust the seasoning to your liking!
