Ingredients

Main
  • 2 large kidneys cleaned and chopped
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons butter
  • 1 teaspoon thyme dried
  • 1 teaspoon parsley dried
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth
  • 1 package pie crusts store-bought or homemade
  • 1 egg beaten (for egg wash)

Equipment

  • 9 inch pie dish
  • Skillet
  • Mixing bowl
  • Rolling pin
  • Sharp knife
  • Measuring cups and spoons

Method

  1. Start by cleaning the kidneys thoroughly.
  2. In a skillet, melt the butter over medium heat.
  3. Sauté the onions and garlic until translucent, about 5 minutes.
  4. Add the chopped kidneys to the skillet. Cook until they are browned, about 5-7 minutes.
  5. Sprinkle in the thyme and parsley, then add the Worcestershire sauce.
  6. Pour in the beef broth and let the mixture simmer for 10 minutes.
  7. If you prefer a thicker filling, let it simmer longer or add a bit of cornstarch mixed with water.
  8. Roll out your pie crust on a floured surface.
  9. Place the filling into the pie crust, then cover with a second crust.
  10. Seal the edges and make slits for steam to escape.

Notes

Serve with mashed potatoes or a side salad for a complete meal.
