Ingredients

Main
  • 1/4 cup water kefir grains
  • 4 cups filtered water
  • 1/4 cup organic sugar cane or brown sugar
  • 1/2 lemon sliced, optional
  • 1/2 cup fruit such as berries or mango, optional

Equipment

  • Glass jar (1-liter or larger)
  • Plastic or wooden spoon
  • Fine mesh strainer
  • Cheesecloth or coffee filter
  • Rubber band (optional)

Method

  1. In a clean glass jar, combine 4 cups of filtered water with 1/4 cup of organic sugar. Stir until the sugar fully dissolves.
  2. Once the sugar water is cool to the touch, gently add 1/4 cup of water kefir grains.
  3. If you want to flavor your kefir water, toss in 1/2 sliced lemon or 1/2 cup of your favorite fruit.
  4. Cover the jar with a cheesecloth or coffee filter secured with a rubber band.
  5. Let the mixture sit at room temperature for 24 to 48 hours.
  6. After fermentation, use a fine mesh strainer to separate the kefir grains from the liquid.
  7. Pour the strained kefir water into clean bottles, leaving some space at the top.
  8. If you want a fizzier drink, seal the bottles and let them sit at room temperature for another 12 to 24 hours.
