Ingredients

Main
  • 4 slices white or soft bread
  • 4 tablespoons butter softened
  • 1/2 cup kaya homemade or store-bought
  • 2 eggs for soft-boiled eggs on the side
  • sweetened condensed milk optional, for drizzling

Equipment

  • Toaster or frying pan
  • Small saucepan
  • Mixing bowl
  • Spatula
  • Measuring cups and spoons

Method

  1. If making kaya from scratch, combine coconut milk, sugar, and eggs in a saucepan. Cook over low heat, stirring constantly until thickened, about 15-20 minutes.
  2. While the kaya cools, toast the bread slices until golden brown.
  3. Spread a generous layer of softened butter on each slice of toasted bread.
  4. Spread a thick layer of kaya over the buttered toast.
  5. Boil water in a small pot. Carefully add the eggs and boil for about 6-7 minutes for a soft yolk.
  6. Remove the eggs and place them in cold water for a minute. Crack open the shells and serve alongside the toast.
  7. Drizzle some sweetened condensed milk over the toast if desired.
  8. Serve the kaya toast warm with soft-boiled eggs on the side.

Notes

Ensure butter is softened for easy spreading. Add variations like fruits or nuts for extra flavor.
